Beautiful gold dress.
A complex nose showing flavours of white flowers and peach.
Unctuous in the mouth with delicate and pleasant aromas of yellow fruits, hazelnut notes and a long, rich and quite saline finish.

Food and wine pairing

It can be enjoyed young (2-3 years old) with veal or poultry in sauce, crustaceans and shellfish, grilled fish or fresh cheese.

Serving suggestions

Ideal served at a temperature situated between 12 and 14°C (54-57°F.).

Ageing potential

From 5 to 10 years.

Origin

Like Chablis appellation, the main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago).

The 34 hectares of the Mont de Milieu “umbrella” vineyard are located on the right bank of the River Serein in the communes of Fleys and Fyé. It enjoys a geographical situation comparable to those of the grand crus and its south/south-east aspect guarantee extremely good sunshine.

The term "Mont de Milieu" corresponds to an ancient separation between Burgundy and Champagne, still symbolized today by the presence of a stone marker erected at the top of this hill.

Vinification and maturing

The juice is delicately extracted by a long pneumatic pressing. That ensure a juice of hight quality thanks to homogeneous extraction, safeguarding grapes integrity. Then it’s settled by natural static clarification. Alcohol fermentation is carried out in a stainless steel tanks under controlled temperatures (18 to 20°C) to preserve the fineness and the freshness. Once, when malolactic fermentation ends, the wine is left to age in oak barrel and on fine lees for 12 months, with lees stirring to bring fullness and complexity to the wine.

Vintage : 2021

A trying year, from the April frost, aggravated by an early restart of the vine, to the harvest. The brutal weather changes imposed their tempo and it was necessary to adapt. The harvest started around September 20th and ended quickly, two weeks later. Upon arrival at the winery, the harvest is sorted and vinified with precision, paying great attention to the aromatic balance. The aromatic potential of the musts is there, with notes of fresh citrus fruits in the Chablis wines, and the sugar-acid balances find the typicalities appreciated by the amateurs of Burgundy wines. This vintage is therefore historically low in volume, but classic in its profile.
